Bring the magic of Disney home this holiday season with a Mickey Mouse Snowman cookie made with delicious gingerbread.

It’s the most magical time of the year! If you want to bring some of that Disney holiday spirit home, try making your own snowman-shaped gingerbread cookies, complete with Mickey ears!
Start with a yummy gingerbread recipe that will make you feel holly jolly! Decorate them with icing and holly decorations. The magical element to these snowmen comes from the Mickey Snowman Cookie Cutter. THIS is an inexpensive option.
You could also get creative with black candy mold circles to make your own Mickey ears, should you prefer to use a snowman cookie cutter you have on hand.
Gingerbread Cookies Recipe
Ingredients:
- 1/2 C unsalted sweet cream butter, softened
- 1/2 C sugar
- 1/2 C molasses
- 1 large egg
- 1/4 C cold water
- 3 1/2 C flour
- 1/2 tsp ground ginger
- 1/2 tsp ground nutmeg
- 1/4 tsp allspice
Directions:
Preheat oven to 350, and line a cookie sheet with parchment paper.
Using a stand mixer, beat together the butter, sugar, molasses and egg.
Add in water, mixing until combined.
In a large bowl, combine the flour and spices.
Gradually mix in the dry ingredients into the wet.
Roll dough out on a floured surface to 1/4 inch in thickness.
Using your favorite gingerbread cookie cutter, cut out your shapes.
Bake in the oven for 10 minutes.
Allow to cool completely before decorating.
Icing for Gingerbread Cookies
Ingredients & Decoration Supplies:
- 2 egg whites
- 1/2 tsp cream of tartar
- 1/2 tsp vanilla
- 3 C powdered sugar
- 1 disposable piping bags, fitted with a number 2 tip
- 1 squeeze bottle
- 1 Jar of Wilton Holly Decorations
Directions:
Using the stand mixer, combine the egg whites, cream of tartar, vanilla and powder sugar and mix until combined and stiff peaks form.
Scoop 1/4 C icing into the piping bag.
Mix 2 tbsp of water into remaining icing to thin it.
Pour icing into squeeze bottle.
It’s time to decorate! We recommend covering the cookies in white icing. But before you do, reserve a small amount for ears. You can add food coloring to make black ears. But the possibilities are endless!
Allow icing to dry for a hour before enjoying.
Short on time? Store-bought icing can be substituted for homemade icing.
These are an adorable choice for a Disney fan this holiday season. They can be easily made with little bakers who would enjoy rolling out dough and cutting out snowman Mickeys.
