Captain America Pancakes

Perfect for the upcoming release of Avengers: Endgame or a 4th of July breakfast, these Captain America Pancakes will ensure your day starts out Marvel-ous!

With kids who are getting older way too quickly, my husband and I are holding tight onto mealtime conversations.  It’s a pretty common occurrence for us to play family trivia games during meals.  Trying to get every one engaged means a lot of questions like “Who do you wish survived the snap?” or the simpler “Who’s your favorite Marvel superhero?”

The former teacher in me doesn’t just accept Captain Marvel as an answer.  You’ve got to give your reasoning, too.

As each new Marvel film is released, there are shifts in their favorites.  I must admit I love Ant-Man.  I love a flawed character, with a good heart and a sense of humor.  But Iron Man is also my jam.  The snark and confidence make me adore his character.

The blockbuster success of Captain Marvel is no shock to this girl mom.  Harper’s been rocking her Captain Marvel Vans all school year in excitement!  But my sweet Harper often chooses Captain America as her pick for favorite Marvel star.

Her reasoning: her birthday.  She was born on the 4th of July, to the sweet tunes of Bruce Springsteen (not an exaggeration…I was insistent the first sounds she heard were The Boss).

She adores all things patriotic and wearing red, white, and blue.  She was named for Harper Lee, in hopes she would be inspired to do what was right even in the face of adversity.  Kind of like a superhero, right?  Her middle name came from one of my favorite places in our hometown.  A street lined with historic homes, full of charm and community spirit.  Clementine Street would be exactly where you’d expect to find a young child who grows up to take on HYDRA.

Thankfully, Harper’s Captain America survived Infinity War.  We are guaranteed a little more time with him in Avengers: Endgame.  As half of the population was destroyed, the Avengers are struggling undo the wrath of Thanos and restore the universe.

I’ve included an easy pancake recipe with themed presentation for your own Captain America fans.  If you’re looking for a time saving hack, feel free to swap in your favorite commerically-available pancake mix.

Captain America Pancakes Recipe

Ingredients

For pancakes:

  • 2 cups flour
  • 3 tablespoons sugar
  • ½ teaspoon salt
  • 1 tablespoon baking powder
  • 2 eggs, beaten
  • 1 teaspoon vanilla extract
  • 1 ¾ cups milk
  • ¼ cup (½ stick) butter, melted but cooled slightly

For decorating:

  • Blueberries (about 8 for each pancake)
  • Strawberries (about 4 for each pancake, sliced)

 

Instructions

  1. In a medium bowl, whisk together dry ingredients: flour, sugar, salt, and baking powder.
  2. In a separate bowl, whisk together the eggs, milk, and vanilla. Then, slowly add the butter.
  3. Create a well in the middle of the dry ingredients. Pour wet ingredients into the well and stir the batter until combined. There may be small lumps. Allow the batter to rest at least 5 minutes.
  4. Heat a griddle to 300 degrees. Spritz with non-stick cooking spray for coat with additional butter prior to adding batter.
  5. To decorate the pancake, use a round cookie or biscuit cutter to remove a circle from the middle.

6.  From the circle that was removed, use a star cookie cutter to cut the star for the middle of the shield.

7.  On a plate, create a layer of sliced strawberries. Lay the round pancake (with the middle circle removed) over the strawberries.

8.  Add blueberries to the center and top with your star mini pancake.

Breakfast is the most important meal of the day, they say.  Make sure it’s Marvel-ous with an easy Captain America celebration.
