Boysenberry Ice Cream Recipe

There’s nothing better than homemade ice cream, unless it’s Boysenberry Ice Cream. Inspired by all the yummy food items from Knott’s Berry Farm’s Boysenberry Festival, this recipe is creamy, sweet, and easy to make.

There are so many amazing boysenberry-flavored treats to try at the Boysenberry Festival.  I shared the must-eat items (Boysenberry Elote…ohhhhh my goodness) in this post, but it’s all about the sweets for me.  Boysenberry Pie, of course, is a classic.  But the Boysenberry Pie Milkshake is incredible with bits of pie mixed in.  You can see a few of the goodies your sweet tooth is craving in this video.

During a kitchen demonstration, I got to check out how the Knott’s chefs whip up the Boysenberry Churro Sundae. With it’s boysenberry flavored soft serve, whipped cream, boysenberry sauce, and freshly made churro, I was in total dessert heaven.

During the three weeks of fun, my family and I have gone back to Knott’s several times to sample more amazing foods (this is only the second time I’ve mentioned Boysenberry Elote which is not nearly enough).  We came back to the boysenberry ice cream, this time trying the cookie sandwich.  It’s gigantic!  As a general rule, I don’t recommend sharing dessert.  I’ll stick with that rule for consistency sake, but you probably shouldn’t order each of your kids their own.

With all of these scrumptious desserts, I wanted to find a way to bring the flavors of the Boysenberry Festival home.  Using boysenberry concentrate purchased from Knott’s Berry Farm, I was able to make homemade boysenberry ice cream.

Ingredients

  • 2 cups heavy cream
  • 3/4 cup milk
  • 3/4 cup sugar
  • 2 teaspoons vanilla extract
  • 1/8 teaspoon salt
  • 2 tablespoons boysenberry concentrate
  • purple food coloring (optional)

Instructions

The Boysenberry Concentrate is actually what is used to make the boysenberry punch available year-round at Knott’s Berry Farm.  I loved that this year the Boysenberry Festival also offered a sugar-free option. Totally going to nab some of that for our next batch.

Mix all ingredients together in medium bowl and stir until well combined.  If you opt to add purple food coloring, remember that a little goes a long way.  Add to ice cream maker, churning according to machine instructions.  After 30 minutes, our ice cream was the consistency of soft serve ice cream. I then transferred the ice cream to a freezer-safe container to harden.

I prefer any ice cream eggs that don’t require cooking.  This is so simple and turns out so much better than any store-bought ice cream.

I served our boysenberry ice cream topped with whipped cream and mini chocolate chips.  Boysenberry cotton candy around the rim made it an extra special treat.

My whole family is pretty hooked on the boysenberry punch from Knott’s Berry Farm.  A fun alternative is to make it a little bubbly by mixing it with Sprite.  Since we have the punch at home on special days, we love shopping for fun food items while we’re visiting Knott’s. If you can’t get to the amusement park (or just need a boysenberry refill ASAP), try this boysenberry concentrate from Amazon.

It’s tough to pick which Season of Fun at Knott’s is my favorite. The adorable PEANUTS Celebration was photo-up fun; we dressed up and got into the old west spirit at Ghost Town Alive.  But there’s so much charm in Spooky Farm and Knott’s Merry Farm!  But I do adore this opportunity to go back to Orange County’s roots and celebrate the history of the boysenberry at Knott’s Berry Farm.  The best way to celebrate all the seasons is with an Knott’s Berry Farm Annual Pass.
